Happy Weekend! I hope you all had a fabulous week and are enjoying a nice weekend!
Here’s what I loved about this last week:
I tried some new recipes for breakfast, lunch, dinner and snacks this week. They were all clean and delicious!
I started by making homemade tortillas with my husband. I followed this recipe by 100 Days of Real Food. With the two of us, it took about an hour to do. But we had fun and the tortillas are delicious! I have used them for tacos, breakfast wraps and lunches. I will definitely make these again.
The tasty wraps were great, but I was also pleasantly surprised by some simple and healthy snacks this week. My favorite, hands down, is cucumber slices with guacamole. So easy, so simple – and oh so yummy!
A Healthy Puppy Report
My dog is 14 now, so health problems are not uncommon for her. She was diagnosed with elevated kidney levels a few years ago. She is on a special diet and takes supplements, along with having to go to the vet every 6 months to get her levels checked. It’s always a little tense around her waiting for her results. She is considered to be in the early stages of kidney failure, which is chronic and progressive, so we know one day the news won’t be what we want to hear. But thankfully we did not get that news this week! Her levels have stabilized since her last test, so she is still only mildly elevated and no changes are needed in her routine! Yay!!!
A Perfect Spring Day
With this winter being crazy and cold for pretty much everyone, I’ve started to really relish the days that the weather is nice. And Saturday was one of those great weather days.
It started out really cold – but the sun warmed us up in no time. And seeing the beautiful sunshine was a treat in itself!
We took a walk on a local greenway to enjoy the Spring-like weather. There were tons of people walking, running and biking. We were all celebrating the great weather!
When the sun went down, the temperatures definitely cooled, but it allowed us to finally use our new fire pit. This was our joint Valentine’s Day gift and with all the freezing temperatures, ice, snow and rain we have received since mid-February, today was the first day we could put it together and use it. It took a while to get the fire going, but when we did it was beautiful and relaxing. A great end to a great day (and yes, I’m forgetting about the Duke-UNC game, because that was not the ending I was hoping for.)
